Welcome!

Welcome to the first Explorers Kitchen blogpost.  We’re excited about this project and about bringing this new world of food to you.  We’ve randomized 205 countries and all 50 states in the US and will be bringing them to you as fate decided.  Our plan is to highlight 2-3 dishes that represent what a home cook might make each country – they may be chosen because of ubiquity or because they’re unknown gems that we think you should know.  Our goal is to be as authentic as possible; however, since we want you to actually make these dishes, we’re going to exercise pragmatism.  This is home cooking, not crazy fancy restaurant cuisine.  We’ll also be podcasting with occasional interviews, give you the recipes, and go over our tasting and feedback.
